I have a lot movie downloads but like to make music rips from these download so hodo do it?

What I can tell you is not all dvd's can be split into separate channels so you can get just the music only. Usually, on a 5-channel mix, music/sfx are put on the 4 "surround" channels, with almost all the dialog going on the center channel. Assuming this is the case with the scenes in question, it's a matter of extracting the audio and replacing the correct channels. You also need a program or programs to be able to do all of this which I am not able to list for you as I do not know.
